This is a mild soft set honey that is produced at our site in an old disused chalk pit near Sompting in Sussex.

 

The Chalkpit is situated on a south facing slope, with wide ranging views over the english channel and the local towns from its elivated possition.  The chalk was used to produce lime mortar and flint for the local town in the 16thC until the 18thC, there are the remains of the old lime kiln on the site and the chalk wall has beautiful flint stratas.  The farmland that it sits in is used for the production of Lamb and the land is on a 4 year rotation with one year given over to Spring Oil Seed Rape.
